Couscous with tomatoes and lemon
Ingredients

- water2 cup
- tomato2 pcs.small
- lemon0.5 pcs.
- extra virgin olive oil2 tbsp. l.
- parsley4 branches.
- mint2 branchesoptional
- salt1 pinch
About the recipe
Couscous with tomatoes and lemon is a delicious and healthy dish. It can be prepared for breakfast, and also used as a dietary food and during fasting.
Cooking steps
Pour the couscous into a saucepan, pour boiling water over it, add salt, add a spoonful of olive oil and cook covered over low heat for 5 minutes.
Cut the tomato into cubes. Cut a few slices of lemon and chop as well. Wash and chop the greens.
Let the couscous cool slightly and mix with the tomatoes and lemon. Place on plates and drizzle with remaining olive oil. Squeeze the remaining lemon and sprinkle the juice over the porridge. Sprinkle herbs on top.
