About the recipe



I prepare lean cabbage soup from fresh cabbage. Despite the fact that lean cabbage soup is prepared without meat, it turns out to be very satisfying and rich. Such cabbage soup is traditionally prepared during Lent. They will also be appreciated by all vegetarians and supporters of healthy eating.

Cooking steps

  1. Shred the cabbage.
  2. Finely chop the onion.
  3. Grate the carrots on a coarse grater.
  4. Peel the potatoes and cut into cubes.
  5. Remove the peel from the tomatoes - to do this, make a cut on the tomatoes and put them in boiling water for a few seconds, after which the skin can be easily removed. Then chop the tomatoes.
  6. If you cook cabbage soup in winter, I recommend using canned blanched tomatoes - they are much tastier than winter greenhouse ones, - Mila.
  7. Pour water into a saucepan, put on fire and bring to a boil.
  8. When the water boils, add the shredded cabbage to the pan, stir, reduce the heat to low, cover the pan with a lid and cook for 15 minutes.
  9. Meanwhile, place a frying pan over medium heat. Pour olive oil on it. Fry the onion a little until it softens.
  10. Add the grated carrots to the onion and continue to fry everything together for another 5 minutes. Periodically stir the contents of the pan with a spatula.
  11. Add tomatoes to the pan and continue cooking for another 5-7 minutes.
  12. Add potatoes and pan-fried vegetables to the pan with cabbage. Cook over medium heat for 10 minutes.
  13. Throw a bay leaf into the pan. Squeeze a clove of garlic through a garlic press. Salt and pepper to taste. Cook for another 10-15 minutes.
  14. Remove the cabbage soup from the heat. Let them sit for a while longer without removing the lid.
