Birch kvass with raisins

Ingredients

Birch sap - 700 ml


Raisins - 40 g


Sugar - 4 tbsp.


Lemon juice - 0.5 tsp.


Dry yeast - 1 tsp.

Cooking process

Products for making kvass from birch sap with raisins and sugar at home are in front of you!

Pour sugar and raisins into a deep container (jar or jug). You can add a pinch of vanilla sugar.

Add dry yeast. If you have fresh yeast on hand, you will need approximately 20-25 g.

Pour in birch sap and stir. It can be slightly warmed up to 25-30 degrees. The drink will become cloudy. Pour in lemon juice and stir again. Leave at room temperature for 2 hours. Cover the container with a cotton cloth or napkin.

During this time, the yeast is activated in warm sweet water.

Strain the drink through a strainer or double layer of gauze, pour into bottles, but not to the top. Squeeze the bottles to release air and tighten the caps. They will turn out to be slightly compressed in appearance. Place them in the refrigerator for at least an hour, but preferably for a day. The kvass will release carbon dioxide and it will inflate the bottles again.
