Nalistniki with cottage cheese
Pancake dough is not suitable for making Ukrainian cottage cheese pancakes, because the pancakes should be bland and serve only as a shell for the incredibly tasty filling. Not only cottage cheese, but also meat, mushrooms, fruits and berries are suitable for filling the sheet pancakes.
Ingredients
- Wheat flour - 1/2 cup
- Starch - 1/2 cup (potato)
- Eggs - 5 pieces
- Milk - 1/2 liter
- Pork lard - 20 grams
- Cottage cheese - 150 grams
- Sour cream - 150 grams
- Eggs - 1 piece
- Granulated sugar - 1/2 tablespoon
- Vanillin - on the tip of a knife
- Butter - 1 tablespoon
Preparation
- To prepare pancakes: add 1/2 cup wheat flour and 1/2 cup starch to a bowl, then mix everything. Pour 1/2 liter of milk into another bowl, break 5 eggs and beat everything. Gently, in the form of a thin stream and stirring constantly, pour the milk-egg mixture into the bowl with starch and flour, then mix everything until smooth.
- Grease a small heated frying pan with a piece of lard, then bake pale golden pancakes in it.
- To prepare the filling: put 150 grams of cottage cheese, 150 grams of sour cream in a bowl and mix them thoroughly. Break 1 egg into a separate bowl, add 1/2 tablespoon of granulated sugar, then beat everything until white. Mix the egg mixture with the curd mixture, then add vanilla to it.
- Take a pancake and place 1 tablespoon of cottage cheese filling on its edge, then roll the pancake into a roll and cut it in half.
- Turn on the oven and leave it to preheat to 190-200 degrees. Place the pancakes on a baking sheet greased with butter, place them in a preheated oven and bake for about 15-20 minutes.
