1. No matter how many new ways to cover frying pans are invented, the best one for cooking pancakes was and remains a cast iron frying pan. And sometimes it’s not enough to heat it up. If you don’t want to get your first pancake lumpy, housewives advise first heating a frying pan greased with vegetable oil or fat and sprinkled with salt. After a few minutes, remove the pan from the heat and let it cool. After wiping it, you need to pour salt again and wipe it with a towel, or a paper towel. After such hardening, the pancakes will definitely not stick to the bottom, and you can turn them over without any problems. The main thing is to remember to grease the pan with pork fat or oil after each pancake you remove. 

2. To make pancakes, try mixing 2 types of flour: 2 parts premium and 1 part second grade. Homemade pancakes made from this mixture will turn out tender, with an airy texture. And cooking pancakes allows you to use not only these two types of flour. By mixing the dough with buckwheat, oatmeal, and rice flour, you will get a completely new taste of a traditional dish.

3. The strength of the dough and the elasticity of the finished pancakes directly depends on the quantity and quality of the eggs used. You can get delicate and thin pancakes by using fresh eggs for the dough. But it is better to refuse egg powder. It does not at all guarantee that you will get delicious pancakes. And for greater strength and elasticity, it is recommended to let the dough rest for at least half an hour.
