Birria Taco Sauce Recipe

Ingredients for ≈2.5 liters of sauce:

— water 4 liters
— chicken 1 pc
— cinnamon 6 sticks
— dry chili guajillo, ancho and pasilla 2 pods each
— fresh Thai chili 30 g
— mashed tomatoes or liquid barbecue sauce 1 l
— onion 1 pc
— cloves 5 buds
— oregano 10 g
— cumin 10 g
— thyme 10 g
— salt to taste

Method of preparation:

1. Bring the water to a boil. Add all ingredients to the pan and cook for about 2.5-3 hours on low heat.
2. Remove the chicken, separate the meat from the bones and skin. And put it back for another 30 minutes.

Then it all depends on your preferences. You can dip tacos in this sauce, pour it over pizza, or add it to ramen.
